Herbed Shrimp Orecchiette Pasta

Herbed Shrimp Orecchiette Pasta Recipe

Ingredients (Serving 4)

  • 5-8 fresh Jumbo Shrimp
  • 2 cups of Orecchiette Pasta (see my recipe for homemade Orecchiette Pasta)
  • 1 container of small Yellow Tomatoes
  • 1 large Red Tomato
  • 1 cup of Black Olives
  • 1 tablepsoon of Fresh Oregano
  • 2 cloves of Garlic
  • 1/4 cup of Olive Oil
  • 1-2 cups of Pasta Water
  • 1 pinch of Sugar
  • Salt and Pepper (to taste)
  • 1/2 teaspoons of Crushed Red Pepper (optional)

Preparation

Pasta

  1. In a large saucepan, bring to a boil 5-6 cups of salted water.
  2. Cook the pasta until ‘Al dente’.  Save about 1-2 cups of the pasta water to add to the sauce.

Sauce

  1. Devein the shrimp removing everything except the tail.
  2. Chop the red tomato, garlic, olives, and oregano.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  4. Add the garlic and crushed red pepper to the pan.  Sauté until the garlic is fragrant.   Next, add the shrimp and brown on both sides (about 2 minutes on each side), then transfer to a plate.
  5. In the same pan, add 2 more tablespoons of olive oil, the red and yellow tomatoes, and oregano.  Turn the heat on high and cook until the skins of the yellow tomatoes open.
  6. Next, add a pinch of sugar, the black olives, pasta water, and then return the shrimp back to the pan.  Cook until the shrimp is reheated (about 2-3 minutes).  Serve on top of the pasta.  Garnish with fresh herbs, crushed red pepper, and your favorite cheese.

Oregano Shrimp Orecchiette Pasta

Garnish with fresh herbs, crushed red pepper, and your favorite cheese.
