Homemade Granola with Sugar Clusters, Almonds, and Dried Berries

Homemade Granola with Sugar Clusters, Almonds, and Dried Berries Recipe

Ingredients (Serving – 4 cups)

  • 4 cups of Quick Oats
  • 1 container of Dried Berries
  • 2 cups of Sliced Almonds
  • 1 tablespoon of Cinnamon
  • 1/4 teaspoon of Salt
  • 1/2 teaspoon of Vanilla
  • 1/4 cup of Honey
  • 1 & 1/4 cups of Coconut Palm Sugar
  • 1/4 to 1/2 cup of Olive Oil

Preparation

  1. Preheat the oven to 325 ºF.
  2. In a large mixing bowl, combine the oats, almonds, cinnamon, and salt.
  3. In a small mixing bowl, combine the coconut palm sugar, honey, olive oil, and vanilla.  Heat in the microwave for about 15-20 seconds.
  4. Add the sugar mixture a little bit at a time to the oats and stir.  Repeat until the oats are fully coated (Note: It is okay that sugar clumps form because this will be the sugar clusters).
  5. Prepare two large baking sheets with aluminum foil.  Transfer the granola to the sheets and spread out evenly throughout the pan.
  6. Bake for 10 minutes, then remove from the oven and stir in the dried berries.  Bake for an additional 10-15 minutes.  Let cool for at least 30 minutes before storing in a container.

    I LOVE homemade granola! So many variations you can make ;) . I’ve never tried coconut palm sugar before. Must try! Happy New Year!!

      Me too! I’ve been eating it as cereal and as a snack. Coconut palm sugar is very good in it and gives a light taste of coconut. Happy New Year to you too :)

    Boy, does that look good!!! I’ll bet it’s as tasty as ice cream, but much healthier for you! Gotta make me some!!!

      Thank you! Yes, it’s not as tasty as ice cream, but very good! Goes great as cereal with fresh fruit likes blueberries and strawberries! I’m going to make my next batch with roasted hazelnuts. :)
