Brazilian Coconut Rice

Coconut Rice Recipe

Ingredients (Serving 4)

  • 2 cups of White Rice (we used Basmati)
  • 2 cups of Water
  • 1 cup of Coconut Milk
  • 1/2 cup of Onions (chopped)
  • 1 clove of Garlic (chopped)
  • 1 tablespoon of Olive Oil

Preparation

  1. Wash rice with water until the water becomes clear (this may take a few tries).
  2. Heat olive oil in a medium size saucepan over medium-high heat.  Sauté the garlic and onions until fragrant.
  3. Add the rice to the pan and stir to evenly coat with olive oil.
  4. Next, add the water and coconut milk.
  5. Turn the heat on high and bring the liquid to a rapid boil.  Once the liquid begins to boil, immediately turn the heat to low and cover with a lid.
  6. Let the rice simmer lidded for 20 minutes.  Once the rice has fully cooked, remove from the heat and fluff with a fork.  Let sit for an additional 5 minutes before serving.  Garnish with freshly chopped cilantro.

    I tried this recipe. It was delicious. Just the right amount of coconut flavoring to let you know it’s there, but not overpowering. Best way to enjoy rice!!!
