Garlic Roasted Yellow Squash and Zucchini

Garlic Roasted Yellow Squash and Zucchini Recipe

Ingredients (Serving 4)

  • 4 Yellow Squash
  • 4 Zucchini
  • 1/4 cup of Olive Oil
  • 2 cloves of Garlic
  • Salt and Pepper
  •  1/2 teaspoon of Crushed Red Pepper (optional)

Preparation

  1. Preheat the oven to broil on low.  Note: Place the oven rack 6 inches from the broiler.
  2. Wash and dice the squash and zucchini, then place on a non-greased baking sheet lined with aluminum foil.
  3. To make the garlic sauce, finely chop the garlic and transfer to a small mixing bowl, then add the olive oil and crushed red pepper.
  4. Salt and pepper the squash and zucchini, then lightly drizzle the garlic sauce over the vegetables.  Note: You can also use a cooking brush to add the sauce.
  5. Broil for 15-20 minutes until the vegetables look slightly browned.
