Picture above shows Garlic Roasted Yellow Squash and Zucchini, a quick and healthy side dish that goes well with any meal.
Ingredients (Serving 4)
Ingredients: (Yellow Squash, Zucchini, Garlic, Olive Oil, Salt & Pepper, and Crushed Red Pepper).
Steps 1 & 2: Preheat the oven to broil on low and place the oven rack 6 inches from the broiler. Wash and dice the squash and zucchini. Place on a baking tray lined with aluminum foil.
Step 3: To make the garlic sauce, finely chop the garlic and transfer to a small mixing bowl, then add the olive oil and crushed red pepper.
Step 4: Salt and pepper the squash and zucchini and lightly drizzle the garlic sauce over the vegetables. Note: You can also use a cooking brush to add the sauce.
Step 5: Broil for 15-20 minutes until the vegetables look slightly browned.
