Homemade Strawberry Crumble Muffin Recipe

Ingredients (Serving-12 Muffins)

Muffin Batter

  • 2 cups of Flour
  • 1 cup of Sugar
  • 2 Eggs
  • 2 tablespoons of Baking Powder
  • 1/2 teaspoon of Salt
  • 1 teaspoon of Vanilla Extract
  • 2 cups of fresh Strawberries
  • 1/2 – 3/4 cup of Milk
  • 1/2 cup of Butter

Crumble Top

  • 3/4 cup of Flour
  • 1/2 cup of Sugar
  • 1/2 cup of melted Butter

Preparation

  1. Preheat the oven to 375°F.
  2. In a bowl, shift the flour, baking powder, and salt.
  3. In a separate bowl, shift the sugar.  Add in the butter and mix until combined.  Next, stir in the eggs, milk, vanilla, and chopped strawberries.  Mix thoroughly.
  4. Slowly add the flour mixture to the wet batter a little bit at a time.  Mix well until all of the flour is incorporated into the batter.
  5. Transfer the batter to a lined or greased muffin tin making sure to fill the batter to the top of the tin.
  6. Making the Crumble ToppingMelt 1/2 cup of butter in the microwave for about 15-20 seconds.  Combine butter with 1/2 cup of sugar, and 3/4 cup of flour until crumbles form.  Note: Add more flour if needed.
  7. Gently press about 1-2 tablespoons of the crumble on top of the batter with a spoon.
  8. Bake for 20 minutes.  Rotate the tins about halfway through the cooking process.
  9. Let the muffins sit in the tin for 10 minutes after removing from the oven, then transfer to a plate or cooling rake.

Optional:  Get creative and carve out strawberry hearts to decorate the tops of your muffins!

Cooking Preparations
